Greek Salad - {Horiatiki Salad} Recipe - Cooking Index
1/2 | Green bell pepper - chopped (small) | |
1/2 | Red onion - sliced (small) | |
1/3 cup | 78ml | Kalamata olives - rinsed = (or other brine-cured black olives) |
1/4 | Seedless cucumber - chopped | |
1 cup | 62g / 2.2oz | Cherry or grape tomatoes - halved |
2 tablespoons | 30ml | Extra-virgin olive oil |
2 teaspoons | 10ml | Finely-chopped fresh oregano |
2 teaspoons | 10ml | Fresh lemon juice - or to taste |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
4 | Thick slices feta cheese - (abt 8 oz) |
In a large bowl, toss together all ingredients except the feta. Put feta on 4 serving plates and spoon some of the salad over each. Serve.
